Preparation
- Saute the bacon until it is crisp
- Add the onions and continue to saute for another minute or so
- Add the potatoes and cook until they are lightly browned.
- Beat the eggs with salt and pepper. Pour them over the bacon, onions, and potatoes and stir gently.
- Reduce the heat to low and cover the skillet. Cook until the eggs are nearly set. Brown under the broiler if necessary.
- Cut the frittata into wedges to serve.
